This entails the need for a deep knowledge of how food and wine, beer, spirits and other beverages work in harmony. A professional sommelier also works on the floor of the restaurant and is in direct contact with restaurant patrons. The sommelier's role may encompass all aspects of the restaurant's service, with an enhanced focus on wines, beers, spirits, soft-drinks, cocktails, mineral waters, and tobaccos. They will be able to interact, explain and sell their product confidently and provide an overall exceptional service to customers. They need to work within the taste preference and budget parameters of the customer. They must keep a clean, hygienic and comfortable environment for customers and be able to interact with people well and be good listeners, warm, friendly and welcoming.
The Shisha Server is a trained and knowledgeable professional specialising in the service of flavoured tobacco. They will be able to interact, explain and sell their product confidently and provide an overall exceptional service to customers. They work in shisha lounges, cafes and in fine dining restaurants. They may be responsible for the development of shisha menus and for the delivery of shisha service training. They work with the food and beverage team, on the floor of the restaurant and in direct contact with customers. They need to work within the taste preference and budget parameters of the customer. They must keep a clean, hygienic and comfortable environment for customers and be able to interact with people well and be good listeners, warm, friendly and welcoming. It is important that they have thorough knowledge of the shisha tobacco they serve, and in particular the range of flavours and the strength. They also need to be a team player and able to work well under pressure. Knowledge of fire safety and customer protection, particularly in relation to hot coals, is critical.
